Admittedly, not all kids like the taste of saffron but for those who love the fun and sunny colour, this is an easy and
quick recipe that can be a good addition to the Christmas treats.
What You Will Need:
100g butter
0,5-1,0g saffron
50g roughly chopped sweet almonds
2 eggs
220g granulated sugar
250g plain flour
1,5 tsp baking powder
80g raisins or sultanas
What To Do:
- Preheat the oven to 200°C. Melt the butter, stir in the saffron and leave to cool (make sure the saffron is finely ground). Roughly chop the almonds.
- Whisk eggs and sugar until light and fluffy. Add the melted butter with saffron and the chopped almonds.
- Mix flour, baking powder and raisins. Add the mix to the egg mix little by little and stir until a well-combined dough.
- Make 3-4 long rolls and place on a baking tray, roughly the same length as the tray, and pat them a little bit flatter. Bake in the middle of the oven for about 10 minutes.
- Immediately, whilst they are hot, cut each “roll” into thin biscotti slices at an angle, roughly 2-3cm each. Turn all the biscotti to one side and roast for another 5 minutes, then turn them over to the other side and roast for another 5 minutes.
- Turn the oven off and let the biscotti rest in the oven a bit longer whilst the oven cools down, with the oven door ajar. For example, put a wooden spoon between the door and the oven.
