Admittedly, not all kids like the taste of saffron but for those who love the fun and sunny colour, this is an easy and

quick recipe that can be a good addition to the Christmas treats.

 

What You Will Need:

100g butter

0,5-1,0g saffron

50g roughly chopped sweet almonds

2 eggs

220g granulated sugar

250g plain flour

1,5 tsp baking powder

80g raisins or sultanas

 

 What To Do:

  1. Preheat the oven to 200°C. Melt the butter, stir in the saffron and leave to cool (make sure the saffron is finely ground). Roughly chop the almonds.
  2. Whisk eggs and sugar until light and fluffy. Add the melted butter with saffron and the chopped almonds.
  3. Mix flour, baking powder and raisins. Add the mix to the egg mix little by little and stir until a well-combined dough.
  4. Make 3-4 long rolls and place on a baking tray, roughly the same length as the tray, and pat them a little bit flatter. Bake in the middle of the oven for about 10 minutes.
  5. Immediately, whilst they are hot, cut each “roll” into thin biscotti slices at an angle, roughly 2-3cm each. Turn all the biscotti to one side and roast for another 5 minutes, then turn them over to the other side and roast for another 5 minutes.
  6. Turn the oven off and let the biscotti rest in the oven a bit longer whilst the oven cools down, with the oven door ajar. For example, put a wooden spoon between the door and the oven.
