In the cold weather, comfort food that you can cook with your kids is a must, and nothing is

as delicious on a cold day as warm, creamy peanut butter muffins with sticky melted

chocolate inside…perfect for a mid-morning snack or an after-dinner treat.

 

What You Need:

1 cup all-purpose flour

1 cup whole-wheat flour

2 teaspoons baking powder

1/2 teaspoon salt

2/3 cup reduced-fat creamy peanut butter

2 tablespoons butter, softened

1 cup packed brown sugar

2 large eggs

3/4 cup milk

2 cups (12-oz. pkg.) Semi-Sweet Chocolate CHips

 

What To Do:

  1. PREHEAT oven to 375º F.
  2. LET the kids line the muffin tins with muffin cups or let them grease the pan.
  3. MEASURE, with the help of your children the all-purpose flour, whole-wheat flour, baking powder and salt in small bowl and let the children combine the mixture.
  4. MEASURE, with the help of your children the butter, peanut butter and brown sugar in large mixer bowl and mix until creamy. Add eggs and milk yourself and beat until smooth.
  5. ADD the flour mixture to peanut butter mixture; beat until just blended.
  6. HAVE the kids stir in the morsels.
  7. ALLOW the kids to spoon the batter into prepared cups, filling them 3/4 of the way full.
  8. BAKE for 18 to 20 minutes or until wooden pick inserted in center comes out slightly sticky.
  9. COOL in pans on wire racks for 5 minutes; remove to wire racks to cool completely.
  10. STORE in airtight containers.
