What You Need:

¼ cup olive oil

3 Tbs. balsamic vinegar

1 Tbs. orange marmalade or preserves

1 clove garlic, finely chopped

½ tsp. curry powder

¼ tsp. salt

¼ tsp. black pepper, freshly ground

2 loaves French bread (each 12 inches long)

2 Tbs. olive oil

2 Tbs. balsamic vinegar

8 cups mixed baby salad greens

1 cup smoked deli turkey breast, cubed

1 cup papaya, peeled, seeded, and cubed

1 cup red or green grapes, halved if large

1 medium red apple, cored and cubed

1 ripe avocado, cut into thin wedges

What To Do:

  1. Preheat oven to 180 degrees.
  2. DRESSING: In a small bowl, whisk together the oil, vinegar, marmalade or preserves, garlic, curry powder, salt, and pepper until blended. Set aside.
  3. BREAD BASKET: Using a serrated knife, cut a 1-inch slice off the top of each loaf of bread. Cut all around the cut side of the bread, 1/2 inch from the edge. With your fingers, rip out the soft bread to form a 1/2-inch-thick shell. Repeat with second loaf of bread. In a small bowl, whisk together the oil and vinegar. Brush on the inside of each loaf. Place the bread directly on the oven rack and bake for 5 minutes. Remove from the oven and cool.
  4. SALAD: In a large bowl, combine the salad greens, turkey, papaya, grapes, and apple. Re-whisk the dressing, pour over the salad, and toss until evenly coated. Spoon the salad into the bread baskets and top with the avocado wedges. Cut each bread basket into four portions and serve.
