Granny May’s Cheese Puff Scones

What You Will Need

3 tsp Baking Powder

1 cup Full Cream Milk

1 cup Grated Chedder Cheese

1 cup Plain Flour

1/8 tsp Salt, sifted

What To Do

1. Pre heat oven to 356ºC / 200ºC

2. Mix all dry ingredients together

3. Add milk and cut through with a butter knife

4. Put about a tablespoon of mixture into oiled muffin tray

5.  Bake for 10 minutes or until risen and golden brown.

Tips

* Select a vintage cheese for a sharper taste

Easy Lasagne

What You Will Need

2 cups Cottage Cheese

½ Cup Cream

12oz/350g Ground Beef

8oz/240g Lasagne Sheets

¼ cup Milk

1 tsp Minced Garlic

1 cup Mozzarella Cheese

1 Tbs Oil

1 Onion, chopped

¼ cup Parmesan Cheese

4 cups Pasta Sauce

What To Do

1. Pre heat oven to  180ºC/356ºF

2. Oil an oven proof lasagne dish

3. Mix milk and cottage cheese together in a separate bowl

4. Fry onion and garlic then brown minced beef

5. Stir in pasta sauce and begin layering with sauce, lasagne, 1/3 cheese (cottage cheese and milk) and 1/3 mozzarella

6. Repeat layers

7. Top with cream and parmesan

Homemade Lemon Curd

Lemon Curd if sealed well will last for weeks. It makes a terrific gourmet gift too!!

What You Will Need

1 1/3 cups Caster Sugar

8 Egg Yolks

200 mls Lemon Juice

4 tsp Lemon Zest

125 g Unsalted Butter

What To Do

1. Whisk egg yolks and sugar – they should be well combined.

2. Pour egg mixture into a saucepan.

3. Add butter, zest and juice

4. On a medium heat, bring to a simmer stirring for five minutes

5. When bubbles begin to appear remove from the heat source.

6. Continue stirring for a further minute.

7. Cool before placing in sterilised jars.

Tips

1. Lemon curd can also be made in a stainless steel bowl placed over a pot of simmering water.

2. Remember to stir constantly to prevent curdling.

Homemade Sugar Free Apple Sauce

Apple sauce is a great treat for babies, kids and mummies and perfect with pork or as an alternative to sugar when you are baking. You can make a whole batch and freeze in cup portions!

What You Will Need

¼ tsp Cinnamon Powder

12 Granny Smith Apples

1 ¼ Water

What To Do

1. Peel and roughly chop apples

2. Place all ingredients into a large saucepan.

3. Mix well then bring to the boil

4. Simmer 30 – 40 minutes or until apples are cooked

5. Blend until smooth

What You Will Need

1 Slice of Bacon, diced

1 Bag of English Spinach

2 Cups Button Mushrooms, slicesd

500 g Chicken Thighs

2 tsp Flour

5 Fresh Thyme Sprigs

2 Leeks, finely sliced

1 tbsp Olive Oil

½ Cup Thickened Cream

1 Cup Vegetable Stock

1 Cup White Wine

What To Do

1. Preheat oven to 356°C /180°C.

2. In batches brown the chicken in a little olive oil and set aside

3. Cook bacon, leek, mushrooms and garlic.

4. Stir through flour for one minute

5. Add stock and wine and bring mixture to a boil.

6. Place chicken and mixture into a casserole dish

7. Stir thyme and cream through.

8. Bake for 1 hour or until chicken is cooked through.

9. Serve with steamed spinach.
